Cottage Cheese Buffalo Chicken Dip
This recipe is inspired by Miranda Galati, real life nutritionist. You can find her original recipe here. It takes a classic recipe that everyone loves and changes out some ingredients for more protein in every serving.
Ingredients
- 2 cups shredded chicken breast
- 1 cup cottage cheese, blended if desired
- 1 cup plain Greek yogurt
- ½ cup Buffalo wing sauce
- 2 cloves garlic, minced
- black pepper, to taste
- 1 tbs. thyme
- 1 tbs. oregano
- 1 tbs. onion powder
- ½ cup sliced green onions, divided
- ½ cup shredded sharp cheddar cheese, more for topping if desired
- ½ cup shredded Monterey jack cheese, more for topping if desired
Instructions
- Preheat the oven to 350°F.
- Combine shredded chicken, cottage cheese, Greek yogurt, buffalo wing sauce, minced garlic, black pepper, thyme, oregano, onion powder 1/3 cup green onions, and shredded cheese. Mix until well combined. If you prefer blended cottage cheese, do this step before mixing the ingredients. You do this by adding cottage cheese to a blender and blending until you reach a desired texture.
- Transfer the dip to an 8×8 baking pan. Use a spatula to press and flatten the dip.
- Top with more shredded cheese if desired.
- Bake for 22-27 minutes or until cheese is melted and bubbling. If you add cheese on top, I recommend taking the dip out of the oven at 22 minutes and then switching the oven to a low broil setting, putting your dip back in the oven for the remaining five minutes. This allows the cheese on top to get crispy and golden brown. Remove from oven and top with the remaining green onions before serving. Serves 6.
Notes
- I used a precooked rotisserie chicken for the convivence with shredding.
- This dish can also be heated in the microwave if you’re looking to save time.
- This meal is good covered in the fridge for 3-4 days. You can eat the dip cold or reheat in the microwave.
