Breakfast Pizza with Cheddar Buttermilk Biscuit Crust
For Crust (this crust fits a standard baking sheet)
1 ½ cups flour
2 tsp baking powder
1/2 cup or 1 stick cold butter
3/4 cup buttermilk
1/3 cup shredded cheddar (use a bacon or seasoned cheddar for a special treat)
Optional chives, rosemary or other seasonings
1/2 cup milk
1 cup shredded cheese of choice
Toppings of your choice – sausage, ham, bacon, peppers, onions, spinach, etc.
Preheat oven to 375 degrees. Mix flour and baking powder. Cube butter and work into the flour. Mix in buttermilk and cheese. Press into the baking sheet. (Refrigerate for an hour or two if you have time to make it spread easier.) Whisk eggs, milk and cheese. Pour over the crust. Sprinkle toppings over the pizza. Bake until crust begins to brown lightly.
